We just wrapped up our first big event- The South Texas Heritage Pork Boucherie! We had such an amazing time and got to work with a wonderful team of chefs, volunteers, and guests. For those of you who have never heard of a boucherie it is an event that celebrates the slaughter of a pig with a big meal that is prepared using all parts of the pig. We planned a Cajun style boucherie featuring two New Orleans chef’s, John Russ from Luke San Antonio and Pieter Sypestyn from Where Y’at Food Truck. Our Boucherie was held at the South Texas Heritage Pork farm, which also provided the pig.
The Boucherie began the night before with a group of chefs who turned a section of the farm into a makeshift outside kitchen. Our guests arrived at 10am and were treated to a wonderful traditional grits and grillades style brunch. We were there to greet them at our welcome table and presented each guest with a gift bag. Our gift bags included recipes for the main dishes as well as a notes section for them to write down cooking tips from our guest chefs. Throughout the day there were different chef demonstrations on how to make each dish. At one point there was one chef demoing boudin, one chef demoing dirty rice, and one chef demoing pork sauce picante. It was such an incredible experience to see our two chef’s sharing their knowledge and expertise with younger cooks and our guests in such a casual and intimate setting. The day was finished off with a huge family style Sunday supper that featured the dishes the chefs had been demoing throughout the day. The barn was turned into an elegant, rustic dining room. Burlap, lace and soft lighting created a shabby chic atmosphere which was a perfect way to give our guests a warm welcome and compliment the fabulous meal created by our many skilled chefs. And of course no New Orleans style event is complete without plenty of alcohol! We were lucky to have beer provided by St Arnolds brewery and plenty of whisky on hand. We were honored to organize the boucherie and flattered by the many compliments our guests shared about the day. It was a successful event with experiences that all attendees will treasure for years to come.
